Curried Turkey With Rice
Ingredients:
2tsp olive oil
1 lb.ground turkey breast
1tsp curry powder
1/2cup canned diced tomatoes, drained
Cooked brown rice
Fat-free plain yogurt
Snipped fresh cilantro
Directions:
Rub oil in a heavy skillet. Heat skillet to medium-high heat.
Brown turkey (5 to 7 minutes); stir in curry powder and diced tomatoes.
Simmer 3 to 5 minutes more; serve over cooked rice.
Top with plain yogurt and fresh cilantro.
1 serving= ¼ cup turkey mixture and ¼ cup brown rice
Other options: instead of rice, serve turkey mixture over sautéed zucchini and yellow squash!
